Lamb Loin with Roast Pumpkin and Spiced Labneh

I love how versatile lamb is, but in New Zealand I think we tend to play it with a pretty straight bat. This recipe is designed to encourage you to experiment with some beautiful Middle Eastern ingredients, which go so well with lamb and are becoming readily available on our shores. Labneh is a cheese made from yoghurt; ricotta is a good substitute, but labneh is much creamier. Serving the lamb with spiced labneh and roast pumpkin is a subtle way of getting Uncle Barry the dairy farmer to branch out a little.
